Production process

Agaves must ripen for at least 7 years. Their peculiarities and exquisite taste depend on the plant species, place of growth, elevation, and time of ripening, In fact, there are certain species of wild agaves that can take up to 20 years to reach their peak ripeness. Once the agaves have been selected, agave leaves are cut and only the heart of the agave or pineapple is maintained.

This is the most important part of the process. To obtain the sugars of the agave, pineapples are placed inside stone ovens (red-hot), these are heated with the pulp and leaves from the maguey. When the oven is completely sealed, it takes at least 3 days for cooking. This ancestral process, defenitely, requires patience and time to get a premium quality and the best taste.

Once the pineapples are cooked, they are cut into smaller pieces and milled on tradicional palenque (circular space with a heavy stone moved by donkey) to obtain the pulp of the maguey, better known as ‘‘bagasse’’.

To reach a natural fermentation, the bagasse or pulp is put into oak wood tubs at least 5 days, depending of the enviroment temperature.

Once the pulp is fermented is transferred to a cooper or clay alembic to start ebullition. Our products are based on a double an even triple distillation.

This mezcal has an intense taste and smell, with a bit smoked avour with a clear look and great pearl reaction, its fermantated for 5 day in oak wood tubs.
